What do you do when you get a call for 2000 desserts? For a Carnival fete?
Say yes and then….
As a small home-based baker, this was a HUGE opportunity. I was at it non stop for 3 days since all I have is a regular consumer oven. We made 1000 mini red velvet cupcakes with buttercream frosting drizzled with ganache and 1000 mini strawberry swirl cheesecakes.
And to top of a crazy few days, we worked the event! You see, we also had to set up and provide service staff. Seeing as this is our first large event, we decided to stay the night at our booth.
I was glad we decided to stay. The looks upon seeing the minis and the reactions while eating them were epic! Too bad we didn’t take a video camera with us.
At the end of the night, we were utterly exhausted but very happy.
And already looking forward to Carnival 2012!
