Indian Wedding Cake
While out on a cake delivery last year, we happened to meet a couple of Marc’s high school classmates. We had some extra red velvet cupcakes (weird huh) so these guys got lucky!
Fast forward to February when I got an email asking if I would make a wedding cake. It so happened, one of the guys was getting married in early April and was so impressed with how my cake had tasted that he was ready to book me once I said yes!
I was totally honored. And freaked out.
Wedding cakes are so much responsibility. It’s right there in the spotlight with the bride and groom so I knew it had to be perfect.
Then to top it off, they wanted 250 red velvet cupcakes packed in boxes as their favours. Thankfully I had Marc and my mom to help decorating these otherwise I would have collapsed from the stress of it all.
It was actually fun making the cake. Transporting it… not so much. Have you any idea how terrifying it is to transport a wedding cake with the condition of our roads? I was in the car behind the one carrying the cake and my heart would skip a beat every time we had to go over a pothole. I wasn’t even that nervous on my wedding day!
Finally we got there and I was so relieved that it was still perfect. I assembled the top tier and the elephants and then breathed a sigh of relief.
